Gastronomy Concept “Pesca” Wins The 2025 Hamburg Foodservice Prize

Standing out with its innovative Pesca – Theatre of Fish gastronomy concept, the Dutch “Younique Concepts” is the international award winner of this year’s Hamburg Foodservice Prize.

The independent jury, consisting of eleven industry experts and former award winners, recognized Pesca as a pioneer of a modern, sustainable and exciting gastronomy concept. The Dutch company wins the Foodservice Prize for its Pesca fish concept and other gastronomic projects in Amsterdam, Rotterdam, Nice and Hamburg.

The restaurant focuses on a lively, marketplace-style setting in which fresh fish of the highest quality takes center stage. Guests select their fish directly at the counter and experience a culinary spectacle in a unique atmosphere. Moreover, Pesca also integrates dynamic pricing and zero-waste strategies into its concept. Throughout the day, the fish restaurant reduces its prices in order to sell all the fish and prevent food waste.

“Since launching Pesca in 2016, we have been redefining what the future of hospitality looks like—challenging traditions with dynamic pricing, a zero-waste strategy, and a company-wide revenue-sharing model. But that is just the beginning. With a fast-growing portfolio of hospitality concepts and an ambitious vision for international expansion, we are on a mission to revolutionize the way people experience food,” said the company.

Up until now, the concept could only be experienced live in Amsterdam and Rotterdam, but in early April, Pesca will open its first location in Germany in the new Westfield Hamburg-Überseequartier, and will also enter France with its first project in Nice in the next months.

The award ceremony that took place at the Grand Elysée Hotel in Hamburg and was attended by around 350 top representatives of the international foodservice industry.
